Savatiano spent years being treated as the quiet workhorse of Greek wine. Soul Food takes a different view. Here, grapes from old vines are given the attention usually reserved for far more fashionable varieties. The result is a dry white with citrus, green apple and white-fleshed fruit, backed by herbal detail and a clean, saline finish.
The grapes come from 35 to 40-year-old Savatiano vines around Plataea, at approximately 400 metres on the slopes of Mount Kithairon. The 2025 release is made from organically grown grapes and carries the PGI Slopes of Kithairon designation. Low yields and mature vines give the variety enough concentration to show what it can do beyond the simple, everyday styles historically associated with Savatiano.
After destemming, the grapes undergo cold skin contact before fermentation with indigenous yeasts. The wine then remains in stainless steel on its lees, gaining texture without losing freshness. No oak, no unnecessary decoration. Just an old Greek variety given a little more room to speak.

The producer
Greek varieties come with baggage. Some are famous. Some are misunderstood. Others barely register outside the places where they grow. Vasiliki Akriotou approaches them without much interest in those old hierarchies.
Founded in 2015 after decades of work as an oenologist, Akriotou Microwinery is built around small-scale vinification and the idea that each grape deserves the right place and the right treatment.
