The Hermit White
The Hermit White starts with three varieties that know Greece very well, but rarely share the same stage in quite this way. Savatiano brings breadth and quiet confidence, Assyrtiko brings tension and freshness, while Aidani adds aroma and lift. Together they create a white that feels Mediterranean without becoming heavy, with peach, pear, bergamot, citrus and white flowers opening gradually in the glass.
The grapes come from Evia, where the varieties are vinified separately before coming together in the final blend. For the 2025 vintage, Savatiano leads at 50%, followed by 38% Assyrtiko and 12% Aidani. It is less about showing off each grape individually and more about how they complete each other.
Cold skin contact and controlled fermentation preserve freshness, while time on the fine lees in stainless steel builds texture and a subtle savoury edge. The result is generous but precise, easy to place by the glass, but with enough depth to stay interesting at the table. A modern Greek white built from familiar grapes, put together in a less familiar way.

The producer
Greek varieties come with baggage. Some are famous. Some are misunderstood. Others barely register outside the places where they grow. Vasiliki Akriotou approaches them without much interest in those old hierarchies.
Founded in 2015 after decades of work as an oenologist, Akriotou Microwinery is built around small-scale vinification and the idea that each grape deserves the right place and the right treatment.
