Assyrtiko under pressure. That’s Bulles des Coteaux. Apostolidis takes fruit from Kavala’s stony slopes and pushes it through the traditional method. Second fermentation in bottle, months on the lees, Brut Nature, no sugar, no cover-up.
The result is raw clarity. A pale pour, a stream of fine bubbles, aromas that swing from citrus and chalk to bread crust and sea spray. On the palate it’s racy, bone-dry, electric, the kind of wine that cuts straight through and doesn’t apologize for it.
Bulles des Coteaux isn’t a sparkling made to flatter. It’s Greek fizz with grit, built to stand tall against the world’s best.
