Retsina Cuvée
Forget the tourist cliché, this isn’t the retsina you think you know. Apostolidis takes Assyrtiko and Savatiano from Paleochori, ferments them clean in stainless steel, and seasons the wine with pine resin like a chef, not a blunt instrument.
The result is precise and modern: citrus and stone fruit cut by a resinous lift that feels herbal, fresh, and sharp rather than heavy. Lees contact adds weight, giving the wine presence without dulling its edge.
Retsina Cuvée is retsina reimagined, bold, balanced, and unapologetically Greek. A bottle that proves tradition can still be radical.
