Paleochori
Paleochori isn’t casual terrain — it’s higher ground, red clay (terra rossa), thin soils where Sauvignon Blanc has to fight to speak. There, Apostolidis treats it with rigor: low yield, hand-picked, four months on lees.
In the glass, it’s pale with green glints. Aromas push forward: passion fruit, kiwi, lime, jasmine, herbaceous undercurrents (grass, chamomile). On the palate, energy. Green apple, citrus tension, subtle minerality. Lees aging gives substance without smoothing away the edges.
This is Sauvignon Blanc turned local manifesto. Paleochori shows what happens when a global grape is made to feel like its place.
