Kapnistos
Kapnistos is Naoussa’s quiet revelation. A reminder that the region holds more than Xinomavro, and that old grapes can feel new when treated with intention. The wine is built around Preknadi, a nearly forgotten local variety that the Dalamara family rescued and now farms organically on the eastern slopes of Vermio.
Fermentation with native yeasts keeps things pure. The aging is where the personality emerges. Kapnistos rests in old, neutral barrels that are deliberately not topped up, leaving that thin line of air which allows controlled oxidation. The result is depth without heaviness, texture without noise, a whisper of earth and nuts folded into its mountain freshness.
Kapnistos is a wine shaped by patience, restraint, and trust in a grape that almost vanished. Clean lines, gentle complexity, and the unmistakable touch of a winemaker who knows exactly how to let a variety speak for itself.
