Day 27 - Odyssey III
Every Odyssey is a chapter in Jima’s pursuit of the perfect red. Day 27 is the third — and boldest — telling of that story. Merlot leads, Cabernet Franc sharpens, together delivering a wine that is both muscle and intellect.
This isn’t a fruit bomb. It’s a red with layers that reveal themselves slowly: cherries, plums, blueberries, smoke, violets, herbs, even a cut of graphite on the finish. Silky tannins keep it elegant, acidity keeps it alive, and nothing feels accidental.
Odyssey III is not about trends or shortcuts. It’s about the grind of iteration, the belief that each vintage is another step forward. A limited, cellar-worthy red that carries the weight of its name: a journey, not a destination.
