Jima Winery
Day 28
Cabernet Franc, stripped of compromise. Whole bunches, pigeage by hand, twelve months in barriques — nothing added that doesn’t serve the wine.
The result is dark, structured, and unapologetically direct: black cherries and blueberries, smoke and cedar, herbs and violets, leather and earth. Silky tannins hold it together, an earthy finish keeps it honest.
Day 28 isn’t polite. It’s a statement — precise, raw, and fearless.
