Day 30 - Liberté
Liberté is Jima’s restless spirit bottled. Every edition rewrites the rules of what a rosé can be, and Day 30 is no exception. Merlot carries the weight, Cabernet Franc adds edge, Debina throws in a wild streak. Pressed in a basket, aged mostly in amphora, it’s rosé with bones, not blush.
Copper in the glass, layered on the nose — apricot, red apple, cherry, herbs, almonds, earth. On the palate, it’s precise and savoury, acidity snapping everything into focus before a finish that lingers with spice and intent.
Liberté isn’t designed to be easy. It’s designed to be memorable. A rosé that stands at the table, holds its ground, and dares you to take it seriously.
