ALS was born from Santorini’s most demanding vineyards in Imerovigli. After twenty years of working this volcanic land, Yiannis Papaoikonomou, Ilias Roussakis, and Alexis Kolovos created their own project in 2018. Grapes are cut from the island’s windswept terraces, then shipped across the sea to Syros, where they’re vinified in small batches with focus and restraint.

The result is Assyrtiko in its rawest form: saline, stony, electric. A wine that doesn’t soften edges or chase polish, but delivers Santorini as it is — brutal, beautiful, unforgettable.
