Assyrtiko brings the spine: acidity, salinity, that unmistakable Cycladic nerve. Monemvasia softens the edges, adds breadth and quiet charm. Fermented and aged on lees, the wine keeps its precision but gains texture, a weight that feels more sea-breeze than oak.
