Pithari 6 belongs to the amphora series created by Paris Sigalas at Oeno P, a project focused entirely on expressing Santorini Assyrtiko through individual vessels and micro-vinifications. Each amphora is treated as its own universe, with fruit sourced from ungrafted, basket-trained vines over 60 years old, grown across Santorini’s volcanic soils.

The Pithari wines ferment and mature exclusively in clay amphorae of 750 or 1600 liters, without oak influence. The approach is minimal: native yeasts, no additions beyond essential protection, and an extended period of aging on the lees that gives the wine both depth and tension. Every amphora is bottled unfiltered, preserving texture and the natural mineral profile of Assyrtiko.

Pithari 6 reflects the core philosophy of Oeno P. Precision. Purity. Absolute respect for the vineyard. It is a single-amphora Assyrtiko that shows Santorini through a focused lens, where fruit, lees and volcanic character meet without intervention or ornamentation.
