Operating out of a humble traditional cellar in Baxedes, this project is a masterclass in restraint. Sigalas has traded stainless steel and oak for large-format amphorae, utilizing slow, Champagne-style pressing and minimal intervention to let the island’s ancient soils speak for themselves. Sourced from vines up to a century old, the resulting wines are an unfiltered look at Santorini’s rugged beauty.
