Sobre Lías
From the birthplace of Albariño comes a wine that takes the variety a little further. Pazo Cilleiro Sobre Lías brings together the Atlantic freshness of Val do Salnés with the extra depth and texture developed through extended lees ageing. A more layered expression of Rías Baixas, without losing the energy that makes Albariño so compelling.
The grapes come from small vineyard plots at 50 to 100 metres above sea level, where quartz-rich granitic soils and the cool, rain-soaked Atlantic climate shape their character. Hand-harvested fruit undergoes a slow, temperature-controlled fermentation in stainless steel, preserving its vibrant citrus, orchard fruit and delicate floral aromas.
The real distinction happens during maturation. Part of the wine spends several months on its fine lees in stainless steel, while the remainder ages for six months in French and American oak barrels. Reunited before bottling, the two components deliver a wine with freshness, a rounded texture and a persistent finish. A natural fit for seafood, richer fish dishes and contemporary Mediterranean cuisine.
